Had a spare hour today so I baked again this week,I think I have found my niche ;o)
This is my all time favourite recipe because it is quick & easy & you can pack them in an airtight container for days & they taste delishhhhh.....
The recipe requires....
12oz real butter
12oz caster sugar
6 freerange eggs
12ozs Plain flour
3 teaspoons of baking powder
3 teaspoons of good vanilla
4 tablespoons of good coco powder ( I use Green & Black)
Zest of a large orange
1 1/4 fluid ozs of orange juice....
Cream the butter for a min or two,then add castor sugar slowly & cream for about 5 mins

add the eggs one by one while mixing on slow speed,the add the vanilla,orange zest & orange juice , it will look like this....

Put all your dry ingredients in a bowl,flour,cocoa powder,baking powder...

Sift the ingredients into the mixing bowl & mix on the slowest speed until all is mixed really well,don't over mix,stop the mixer the minute it is all mixed :o)

Get your swissroll tin & place some greaseproof paper at the end,spread the mix evenly in the tin :o)

Place in a fan oven on 160 for 40 mins or until your skewer comes out dry...
If you have a little helper as I did don't turn your back for too long or this will happen....lol

Remove from the oven & cool completely before icing...

For the icing I just put a small amount of icing sugar in the bowl & add some orange juice until it reaches the consistancy I like it to be at....

Then take a small plactic sandwich bag ( I don't use my icing bags because they are so fekky to clean afterwards,this way you get to throw the bag out & less clean up) snip the very corner of it & put your icing on the cake ,no certain way to do this,just be as creative as you like ....


I also like to add some chocolate to the top,so I just melt 100gr of dairymilk & add 1 tsp of icing sugar & use the same method as above with the icing bag ;o)



Now all that's left to do is serve or store....lol
