Today I was visiting my sister in law because my grandson was having a playdate with her son Charlie.I decided to bake some cupcakes & bring them with me :-)
I made chocolate orange cupcakes & iced them with orange butter icing,I also added some orange zest to the icing to give it some pop....lol.
I have been forever looking for a simple butter icing recipe & no matter what I find I have never been happy with them.Today I tried Rachel Allens recipe from her book BAKE I have to say this is my favourite "go to book" I have many of Rachels books but this one seems to keep things very simple ,I am waiting to get her newest book this week so I can try something new :o).
***Her recipe for butter icing is as follows****
3 1/2 OZS ( 100g) butter softened
7ozs ( 200g) icing sugar, sifted
1 tbsp of milk or water ( I used fresh orange juice & some zest for the same orange )
* Place the butter in a large bowl and beat thoroughly with a wooden spoon until it is very soft ( I used my mixer... lol)
* Add the sifted icing sugar and the water,milk or juice and beat until smooth .
Now how easy is that :o)
This was my first time using this nozzel & I was happy with the result,moi not being in any way able to ice....lol
Yummy you can just see a littl peep from the orange zest in this shot ;o)

Yummy cakes Jean and yes that is the Butter Icing recipe I use too and like you am dying to see her new book.
